The Leaning Pig to Open in Downtown Gainesville
After yesterday's bombshell sad news, I wanted to follow it up with something more positive. Tommy Dorn of Dorn's Liquors and the venerable Dave Piasecki, former GM at Dragonfly Sushi & Sake Company are opening a new concept together in Downtown Gainesville. Occupying the former Gelato Company space will be The Leaning Pig, a restaurant focused on sandwiches, salads, charcuterie, and small plates using locally sourced ingredients.
While Dragonfly alum, Jesse Kingsbury, will helm the kitchen, there will also be rotating menu items created by other local chefs. The restaurant will be serving both breakfast and lunch, with beer and wine available. I'm told one of the main inspirations for the concept were restaurant family meals, when staff gets together for a casual sit-down meal often creatively put together from that day's sourced ingredients.
"We want to make food with the same high end chef approach but without the pretentiousness of high end dining" says co-owner Tommy Dorn, "just a spot that we can all hang out at and make food that is exciting and fun."
I took a little peeky peek at the developmental menu and there are items like The Big Pig Sandwich made with crispy hog jowl, bacon, sprouts, tomato and the Puttanesca Sandwich, made with local sweet Italian sausage meatballs, anchovies, prosciutto, bocconcini, marinated tomatoes, olives, capers, garlic confit, romesco, and parmesan cheese.
Yeah, this place is going to be a swell time.
This photo is a sneak peek of what's to come as their team is targeting an opening date in the next month or so. The initial focus at opening will be on menu items more conducive to take-out and delivery. Once the post-COVID world begins to emerge, they will look at expanding to charcuterie and more dine-in options.
